4 bone-in pork chops (about ¾ inch thick)

¼ cup pure maple syrup

2 tablespoons Dijon mustard

2 tablespoons apple cider vinegar

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

Prepare the Marinade: In a medium bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, minced garlic, fresh thyme, salt, and black pepper until well blended.

    Marinade the Pork Chops: Place the pork chops in a large resealable plastic bag or shallow dish. Pour the marinade over the pork chops, making sure they are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably up to 4 hours for more flavor.

      Prepare the Grill: Preheat your grill to medium-high heat (about 400°F). If using a charcoal grill, ensure the coals are evenly distributed and are covered in gray ash.
