1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

¾ cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

½ cup buttermilk (use milk with 1 teaspoon of vinegar if unavailable)

¾ cup fig jam (store-bought or homemade)

⅓ cup chopped walnuts (optional)

Zest of 1 lemon (optional)

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups with cooking spray.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and brown sugar together until light and fluffy, about 2-3 minutes.

        Add Eggs and Vanilla: Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.

          Incorporate Dry Ingredients: Gradually add the dry ingredients to the butter-sugar mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing just until combined. Avoid overmixing.
