Ingredients

1 pound frozen tater tots

1 cup shredded cheddar cheese

1 cup shredded pepper jack cheese

1 can (15 oz) black beans, rinsed and drained

1 cup diced tomatoes (fresh or canned, drained)

1 jalapeño, thinly sliced (seeds removed for less heat)

1/2 cup sliced green onions

1/4 cup sour cream

1/4 cup guacamole

1/4 cup sliced olives (optional)

1 tsp chili powder

1 tsp cumin

Fresh cilantro for garnish

Salt and pepper to taste

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.

Prepare Tater Tots: Spread the frozen tater tots evenly on the prepared baking sheet. Bake according to package instructions until they are golden brown and crispy, typically around 25-30 minutes.

Add Flavor: In a small bowl, combine the black beans, diced tomatoes, chili powder, cumin, and a pinch of salt and pepper. Mix well to combine.

Layer Up: Once the tater tots are baked to perfection, remove them from the oven. Sprinkle the black bean and tomato mixture evenly over the tater tots.

Cheesy Goodness: Generously layer the shredded cheddar and pepper jack cheese on top of the tater tots and toppings.

Final Bake: Return the loaded tater tots to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Garnish: Remove from the oven and top with sliced jalapeños, green onions, and olives (if using). Drizzle with sour cream and dollop guacamole over the top.

Serve: Garnish with fresh cilantro for brightness, then serve immediately while hot and melty. Enjoy your loaded nacho tater tots with friends and family!
