Loaded Nacho Sweet Potato Fries

2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon chili powder

Salt and black pepper, to taste

1 cup shredded cheddar cheese

½ cup black beans, rinsed and drained

½ cup fresh pico de gallo or diced tomatoes

¼ cup sliced jalapeños (fresh or pickled)

½ cup sour cream or Greek yogurt

¼ cup chopped fresh cilantro, for garnish

Optional: Sliced avocado or guacamole, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Cut them into fries, about ¼ inch thick.

      Season the Fries: In a large bowl, toss the sweet potato fries with olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper until evenly coated.

        Bake the Fries: Spread the fries in a single layer on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until they are crispy and golden.
