1 large head of cauliflower, chopped into florets

1 cup sharp cheddar cheese, shredded

1 cup cream cheese, softened

1 cup sour cream

1/2 cup green onions, sliced (plus extra for garnish)

1/2 cup cooked bacon, crumbled

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon paprika

1 cup panko breadcrumbs

2 tablespoons olive oil

Preheat Oven: Begin by preheating your oven to 350°F (175°C).

    Boil Cauliflower: In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 5-7 minutes until fork-tender. Drain and set aside.

      Prepare Cheese Mixture: In a mixing bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, black pepper, and paprika. Mix until smooth.

        Incorporate Cheeses and Bacon: Fold in the shredded cheddar cheese, cooked bacon, and sliced green onions into the cheese mixture. Taste and adjust seasoning with salt as needed.

          Combine Cauliflower and Cheese Mixture: Gently stir in the cooked cauliflower, ensuring all florets are coated with the cheesy goodness.

            Transfer to Baking Dish: Pour the cauliflower mixture into a greased 9x13 inch baking dish. Spread evenly.

              Prepare Topping: In a small bowl, mix together the panko breadcrumbs with olive oil until they are evenly coated. Sprinkle this mixture generously over the cauliflower mixture in the baking dish.

                Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbly.
