8 slices of thick-cut bacon, chopped

1 large onion, diced

1 red bell pepper, diced

1 cup baby spinach, chopped

10 large eggs

1 cup whole milk

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

1½ cups shredded cheddar cheese

1 cup diced cooked potatoes (or frozen hash browns)

¼ cup chopped fresh chives (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the grease in the skillet.

      Sauté Vegetables: In the same skillet, add the diced onion and red bell pepper. Sauté for about 5-7 minutes until softened. Add the chopped spinach and cook for another 2 minutes until wilted. Remove from heat.
