4 large russet potatoes, washed and cubed

4 strips of bacon, chopped

1 medium onion, diced

1 bell pepper (any color), diced

4 large eggs

1 cup shredded cheddar cheese

½ cup sour cream

2 green onions, sliced

Salt and pepper, to taste

Olive oil, as needed

Paprika, for garnish (optional)

Instructions
 

Prepare the Potatoes: Start by bringing a large pot of salted water to a boil. Add the cubed potatoes and cook until fork-tender, about 10-12 minutes. Drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Once done, remove the bacon and let it drain on paper towels.

      Sauté the Aromatics: In the same skillet with the bacon grease, add diced onions and bell peppers. Sauté for about 5 minutes until they’re softened and starting to brown.

        Mix in the Potatoes: Add the drained potatoes to the skillet, seasoning with salt and pepper. Stir everything to combine and let it cook on medium heat for about 5 minutes, allowing the edges of the potatoes to crisp up.

          Add Eggs: Create small wells in the potato mixture and crack an egg into each well. Cover the skillet and cook for about 5 minutes, or until the eggs are cooked to your desired doneness.

            Cheesy Finish: Sprinkle the shredded cheddar cheese over the top of the skillet and cover again for 1-2 minutes, or until the cheese is melted.
