Lime & Tuna Salad Bowl

Ingredients
  

1 can (5 oz) of tuna in olive oil, drained

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1 small cucumber, diced

¼ red onion, finely chopped

1 cup mixed greens (arugula, spinach, or kale)

1 lime, juiced (around 2 tablespoons)

2 tablespoons extra virgin olive oil

1 teaspoon Dijon mustard

Salt and pepper to taste

Fresh cilantro or parsley, chopped, for garnish

Optional: ½ cup cooked quinoa or brown rice for a heartier meal

Instructions
 

Prepare the Dressing: In a small bowl, whisk together the lime juice, olive oil, Dijon mustard, salt, and pepper. Set aside.
