1 cup coconut milk (or almond milk)

1/2 cup ripe mango, pureed

3 tablespoons chia seeds

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1/2 teaspoon vanilla extract

1/4 teaspoon ground cardamom (optional for a spice kick)

Fresh mango slices, for garnish

Mint leaves, for garnish

Instructions
 

Prepare the Chia Pudding Base: In a mixing bowl, combine coconut milk, pureed mango, chia seeds, honey or maple syrup, vanilla extract, and ground cardamom. Whisk the mixture thoroughly to ensure the chia seeds are evenly dispersed.

    Let it Sit: Cover the bowl with plastic wrap and refrigerate the mixture for at least 4 hours, or overnight. This allows the chia seeds to absorb the liquid and swell, creating a thick pudding-like consistency.

      Stir Before Serving: Once the chia pudding has set, remove it from the fridge and give it a good stir to break up any clumps that may have formed.

        Assemble the Cups: Spoon the chia pudding into serving cups or small bowls, filling them about 3/4 of the way.
