8 oz whole grain rotini pasta

2 cups cooked chicken breast, diced

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (any color), chopped

½ red onion, thinly sliced

½ cup Kalamata olives, pitted and sliced

1 cup feta cheese, crumbled

⅓ cup fresh parsley, chopped

⅓ cup extra-virgin olive oil

3 tbsp red wine vinegar

1 tsp dried oregano

Salt and pepper, to taste

Lemon wedges, for serving

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the whole grain rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust seasoning to taste.
