Lentil and Sweet Potato Stew

1 cup green or brown lentils, rinsed

2 medium sweet potatoes, peeled and diced

1 large onion, chopped

3 cloves garlic, minced

2 carrots, chopped

2 celery stalks, chopped

1 can (14 oz) diced tomatoes

4 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried thyme

1/2 teaspoon cayenne pepper (optional for heat)

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Stir in the garlic, carrots, and celery and continue cooking for another 4 minutes until soft.

    Add Sweet Potatoes and Spices: Add the diced sweet potatoes, ground cumin, smoked paprika, and dried thyme to the pot. If you like it spicy, sprinkle in the cayenne pepper. Stir well to combine and let it cook for 2 minutes.

      Pour in Lentils and Tomatoes: Add the rinsed lentils and canned diced tomatoes (with their juices) to the pot. Stir to combine everything.

        Simmer the Stew: Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 25-30 minutes, or until the lentils and sweet potatoes are tender. Stir occasionally to prevent sticking.

          Season to Taste: Once cooked, check the stew for seasoning. Add salt and pepper to taste. If the stew is too thick, you can add a little more broth or water to reach your desired consistency.
