Lemon Herb Roasted Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

Zest of 1 lemon

Juice of 1 lemon

1 tablespoon fresh parsley, chopped

1 tablespoon fresh cilantro, chopped

4 whole grain or spinach wraps

Mixed greens (arugula, spinach, or kale)

1 avocado, sliced

Hummus or tzatziki (for spreading)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: In a medium bowl, combine the drained chickpeas, olive oil, garlic powder, onion powder, smoked paprika, ground cumin, salt, black pepper, lemon zest, and half of the lemon juice. Toss well to coat all the chickpeas evenly.

      Roast Chickpeas: Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes, shaking the pan halfway through, until they are crispy and golden brown.

        Make the Herb Dressing: In a small bowl, combine the remaining lemon juice, chopped parsley, and chopped cilantro. Stir well to mix.

          Assemble the Wraps: Lay the whole grain or spinach wraps flat on a clean surface. Spread a generous layer of hummus or tzatziki across each wrap.
