Lemon Herb Grilled Salmon with Asparagus

Ingredients
  

4 salmon fillets (6 ounces each)

1 bunch of fresh asparagus (about 1 pound), trimmed

4 tablespoons olive oil, divided

Zest and juice of 2 large lemons

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon fresh dill, chopped

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional for some heat)

Instructions
 

Marinate the Salmon: In a medium bowl, whisk together 2 tablespoons of olive oil, lemon zest, lemon juice, minced garlic, chopped parsley, chopped dill, salt, black pepper, and red pepper flakes. Place the salmon fillets in a shallow dish and pour the marinade over them. Let marinate for 20-30 minutes at room temperature, turning occasionally.

    Prepare the Asparagus: While the salmon is marinating, toss the trimmed asparagus with the remaining 2 tablespoons of olive oil, a pinch of salt, and black pepper. Set aside.

      Preheat the Grill: Preheat your grill to medium-high heat. If you're using a grill pan, place it over medium-high heat on the stovetop until hot.

        Grill the Salmon: Once the grill is ready, reduce the heat to medium. Place the marinated salmon fillets on the grill, skin side down. Grill for about 4-5 minutes, then gently flip the fillets using a spatula. Cook for another 4-5 minutes or until the salmon flakes easily with a fork and has nice grill marks.

          Grill the Asparagus: During the last few minutes of grilling the salmon, add the asparagus to the grill. Grill for about 3-4 minutes, turning occasionally, until they are tender and slightly charred.

            Serve: Remove the salmon and asparagus from the grill. Serve the salmon topped with additional fresh herbs and a wedge of lemon on the side. Pair the dish with your favorite side, such as quinoa or a light salad.
