Lemon Herb Grilled Salmon and Asparagus

For the Salmon:

4 (6-ounce) salmon fillets, skin on

1/4 cup olive oil

Juice and zest of 2 large lemons

4 cloves garlic, minced

2 tablespoons fresh dill, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon salt

1/2 teaspoon black pepper

For the Asparagus:

1 pound fresh asparagus, trimmed

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Juice of 1/2 lemon

Instructions
 

Marinate the Salmon:

    - In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, dill, parsley, salt, and pepper.

      - Place the salmon fillets in a large resealable plastic bag or a shallow dish and pour the marinade over them.

        - Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

          Prepare the Asparagus:

            - While the salmon marinates, prepare the asparagus.

              - In a separate bowl, toss the trimmed asparagus with olive oil, garlic powder, salt, pepper, and lemon juice until evenly coated.

                Preheat the Grill:

                  - Preheat your grill to medium-high heat (about 400°F / 204°C).

                    - If using a grill pan, heat it on the stovetop over medium-high heat.

                      Grill the Salmon and Asparagus:

                        - Remove the salmon from the marinade, allowing excess marinade to drip off.

                          - Place the salmon fillets skin-side down on the grill and cook for about 5-7 minutes, depending on thickness, until the salmon easily flakes with a fork.

                            - At the halfway mark, add the asparagus to the grill. Cook for about 4-5 minutes, turning occasionally, until they're tender and have nice grill marks.

                              Serve:
