Lemon Herb Grilled Chicken with Asparagus

4 boneless, skinless chicken breasts

1 tablespoon olive oil

Juice and zest of 2 lemons

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon salt

1/2 teaspoon black pepper

1 pound fresh asparagus, trimmed

Optional garnish: lemon wedges and fresh parsley for serving

Prepare the Marinade: In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper until well combined.

    Marinate the Chicken: Place the chicken breasts in a large resealable bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).

      Preheat the Grill: Heat your grill to medium-high heat (about 400°F/200°C). If using a grill pan, preheat it over medium heat on the stove.

        Prepare the Asparagus: While the grill preheats, toss the trimmed asparagus with a drizzle of olive oil, a bit of salt, and pepper.

          Grill the Chicken: Remove the chicken from the marinade, allowing any excess to drip off. Place the chicken on the grill and cook for about 6-7 minutes per side, until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

            Grill the Asparagus: During the last 5-6 minutes of the chicken cooking, add the asparagus to the grill. Cook, turning occasionally, until tender and slightly charred.
