Lemon Garlic Shrimp with Zucchini Noodles

1 pound large shrimp, peeled and deveined

2 medium zucchinis, spiralized into noodles

4 tablespoons olive oil, divided

4 cloves garlic, minced

1 lemon (zest and juice)

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

1/4 cup fresh parsley, chopped

1/4 cup grated Parmesan cheese (optional)

Instructions
 

Prepare the Zucchini Noodles: If you haven't already, spiralize the zucchinis into noodle shapes using a spiralizer or a julienne peeler. Set aside.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant.

      Cook the Shrimp: Add the shrimp to the skillet, season with salt and black pepper. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque. Squeeze in the lemon juice and add the lemon zest, tossing to combine well. Remove the shrimp from the skillet and set aside.

        Sauté the Zucchini Noodles: In the same skillet, add the remaining 2 tablespoons of olive oil. Toss in the spiralized zucchini noodles and sauté for about 2-3 minutes until just tender but still slightly crisp.

          Combine: Return the cooked shrimp to the skillet with the zucchini noodles. Toss everything together to combine all flavors, adding more salt and pepper if necessary.

            Finish and Serve: Remove from heat, and sprinkle chopped parsley and Parmesan cheese on top (if using). Serve immediately and enjoy a bright, flavorful dish!
