Lemon Garlic Shrimp Pasta

8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1/4 cup olive oil

1 tsp red pepper flakes (adjust to taste)

Zest of 1 lemon

Juice of 1 lemon

1/2 cup chicken or vegetable broth

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

Freshly grated Parmesan cheese, for serving

Cook the Pasta: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the minced garlic and red pepper flakes, cooking for about 30 seconds until fragrant.

      Add the Shrimp: Increase the heat to medium-high, then add the shrimp in a single layer. Season with salt and pepper. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

        Create the Sauce: In the same skillet, add the chicken or vegetable broth, lemon zest, and lemon juice. Stir well and bring to a simmer, allowing it to reduce slightly for about 2-3 minutes.

          Combine Pasta and Shrimp: Add the drained pasta to the skillet, along with the remaining olive oil and the cooked shrimp. Toss everything together, adding reserved pasta water a little at a time until desired sauce consistency is reached.

            Finish with Fresh Herbs: Stir in the chopped parsley and adjust seasoning with salt and pepper as needed.

              Serve: Divide the pasta among plates and sprinkle generously with freshly grated Parmesan cheese. Enjoy hot!
