For the Shrimp:

1 lb large shrimp, peeled and deveined

3 tbsp olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

For the Quinoa:

1 cup quinoa

2 cups vegetable broth or water

1 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper

1/2 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1 avocado, sliced (for topping)

For the Dressing:

2 tbsp olive oil

1 tbsp apple cider vinegar

1 tsp Dijon mustard

Salt and pepper to taste

Instructions
 

Cook the Quinoa:

    - Rinse the quinoa under cold water in a fine mesh strainer. In a medium saucepan, combine quinoa, vegetable broth (or water), olive oil, salt, and black pepper. Bring to a boil, then reduce to a simmer. Cover and cook for about 15 minutes, or until the liquid is absorbed and the quinoa is fluffy. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

      Prepare the Shrimp:

        - In a large skillet, heat 3 tablespoons of olive oil over medium-high heat. Add minced garlic and sauté for about 30 seconds, until fragrant.

          - Add the shrimp to the skillet along with lemon zest, lemon juice, red pepper flakes, and season with salt and pepper. Cook for 2-3 minutes on each side, or until shrimp are pink and opaque. Ensure not to overcook them to keep them tender.

            Make the Dressing:

              - In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper until well combined. Adjust seasoning to taste.
