2 large boneless, skinless chicken breasts

3 tablespoons olive oil

3 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

4 whole wheat or spinach wraps

1 cup fresh spinach leaves

1 medium tomato, diced

1/2 cucumber, sliced

1/2 red onion, thinly sliced

1/2 cup feta cheese, crumbled (optional)

Tzatziki sauce or your favorite dressing (for drizzling)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper. Whisk until well combined. Add the chicken breasts to the bowl, making sure they're thoroughly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

    Preheat the Grill: Preheat your grill or grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking.

      Grill the Chicken: Once the grill is hot, remove the chicken from the marinade and place it on the grill. Cook for about 6-8 minutes per side, or until the chicken reaches an internal temperature of 165°F (75°C) and has nice grill marks.
