1 pound fresh green beans, trimmed

3 tablespoons olive oil

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional for heat)

1/4 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/4 cup feta cheese, crumbled (optional)

Fresh parsley, chopped for garnish

Blanch the Green Beans: In a large pot, bring about 4 cups of water to a boil. Add the trimmed green beans and blanch them for 3-4 minutes until they are bright green and tender-crisp. Immediately transfer the beans to a bowl of ice water to stop the cooking process. Let them cool for about 5 minutes, then drain and pat dry.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, fresh lemon juice, lemon zest, minced garlic, salt, black pepper, and red pepper flakes. Taste and adjust seasoning if necessary.
