Lemon Dill Chicken Skewers

1.5 lbs chicken breast, cut into 1-inch pieces

1/4 cup olive oil

Juice of 2 lemons (about 1/4 cup)

Zest of 1 lemon

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika (optional, for added color)

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes prior)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine the olive oil, lemon juice, lemon zest, chopped dill, minced garlic, salt, black pepper, and paprika. Whisk together until well combined.

    Add Chicken: Add the chicken pieces to the marinade, ensuring they are evenly coated. Cover the bowl with plastic wrap or transfer to a resealable plastic bag, and refrigerate for at least 30 minutes (up to 4 hours for more flavor).

      Preheat the Grill: When you’re ready to cook, preheat your grill to medium-high heat (about 375°F to 400°F). If using an oven, preheat to broil.

        Prepare Skewers: Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

          Grill the Skewers: Place the skewers on the preheated grill. Cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.

            Optional Broiling: If you can’t grill, place the skewers on a baking sheet and broil in the oven, about 5-6 minutes on each side until the chicken is cooked through and slightly charred.

              Serve: Remove the skewers from the grill and let them rest for a minute. Serve warm with extra lemon wedges and a sprinkle of fresh dill on top.
