1 ½ cups all-purpose flour

½ cup granulated sugar

2 tsp baking powder

½ tsp baking soda

¼ tsp salt

Zest of 1 large lemon

½ cup unsalted butter, melted

1 large egg

1 tsp pure vanilla extract

⅓ cup buttermilk

1 cup fresh blueberries (can substitute with frozen)

2 tbsp lemon juice (freshly squeezed)

Optional: powdered sugar for dusting

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a mini muffin tin or line it with mini muffin liners.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and lemon zest until well combined.
