Lemon Basil Couscous Salad

Ingredients
  

1 cup couscous

1 ¼ cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 cucumber, diced

¼ red onion, finely chopped

½ bell pepper (any color), diced

¼ cup fresh basil leaves, chopped

¼ cup feta cheese, crumbled (optional)

½ cup cooked chickpeas (canned, drained and rinsed)

3 tablespoons olive oil

2 tablespoons lemon juice

Zest of 1 lemon

Salt and pepper to taste

Instructions
 

Cook the Couscous: In a medium saucepan, bring the vegetable broth (or water) to a boil. Stir in the couscous, remove from heat, cover, and let it sit for 5 minutes. Afterward, fluff with a fork and set aside to cool.

    Prepare the Vegetables: While the couscous is cooling, chop the cherry tomatoes, cucumber, red onion, and bell pepper. Place them in a large mixing bowl.

      Mix the Dressing: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper. Adjust seasoning to taste.

        Combine Ingredients: Once the couscous has cooled, add it to the bowl with the chopped vegetables. Toss in the cooked chickpeas and fresh basil, then pour the dressing over the salad.

          Toss and Serve: Gently toss everything together until well combined. If using feta cheese, sprinkle it on top before serving.

            Chill: For the best flavor, let the salad chill in the refrigerator for at least 30 minutes before serving, allowing the flavors to meld.
