Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef (or ground pork)

1/2 cup cooked jasmine rice

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1/4 cup soy sauce

2 tbsp sesame oil

1 tbsp brown sugar

1 tsp ginger, grated

1/2 tsp black pepper

1/4 tsp red pepper flakes (adjust for heat preference)

1 egg, lightly beaten

Sesame seeds and additional chopped green onions for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tbsp gochujang (Korean chili paste)

1 tsp lime juice

1 tsp honey

Pinch of salt

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Make the Meatball Mixture: In a large mixing bowl, combine the ground beef (or pork), cooked jasmine rice, green onions, garlic, soy sauce, sesame oil, brown sugar, ginger, black pepper, red pepper flakes, and the beaten egg. Mix thoroughly until all ingredients are well combined.

      Form Meatballs: Using your hands, create meatballs about 1 inch in diameter. Place them on a baking tray lined with parchment paper, ensuring they are spaced apart.

        Bake the Meatballs: Bake the meatballs in the preheated oven for 18-20 minutes, or until they are fully cooked and slightly browned.

          Prepare the Spicy Mayo Dip: While the meatballs are baking, whisk together the mayonnaise, gochujang, lime juice, honey, and a pinch of salt in a small bowl until smooth. Adjust the spice level to your taste by adding more gochujang if desired.

            Serve: Once the meatballs are done, remove them from the oven and let them cool for a few minutes. Garnish with sesame seeds and extra green onions before serving. Serve the meatballs on a platter alongside the spicy mayo dip for dipping.
