1 lb beef sirloin, thinly sliced against the grain

1/4 cup soy sauce

2 tbsp brown sugar

1 tbsp sesame oil

3 cloves garlic, minced

1-inch piece ginger, grated

1 tbsp gochujang (Korean chili paste)

1 tbsp rice vinegar

2 green onions, finely chopped (plus more for garnish)

1 tbsp sesame seeds

6-8 bamboo skewers (soaked in water for 30 minutes if using wooden)

Instructions
 

Marinate the Beef: In a mixing bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, gochujang, rice vinegar, and chopped green onions. Mix well until the sugar is dissolved.

    Prepare the Meat: Add the sliced beef sirloin to the marinade, ensuring each piece is fully coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or up to overnight for better flavor.

      Preheat the Grill: Preheat your grill (or grill pan) to medium-high heat. If using a charcoal grill, ensure the coals are glowing and hot.

        Assemble Skewers: Take the marinated beef out of the refrigerator. Thread the beef pieces onto the soaked bamboo skewers, leaving a little space between each piece to allow for proper cooking.

          Grill the Skewers: Place the skewers on the preheated grill. Grill for about 2-3 minutes on each side, or until the beef is nicely charred and cooked to your preferred doneness.
