1 lb (450g) boneless, skinless chicken breasts

1 cup BBQ sauce (your favorite brand)

1 large sweet potato, peeled and cut into small cubes

1 tablespoon olive oil

Salt and pepper to taste

4 large whole wheat tortillas

1 cup shredded cheddar cheese

1 cup baby spinach or mixed greens

1/2 cup corn kernels (canned or frozen)

1 avocado, sliced

Optional: Fresh cilantro, lime wedges for garnish

Instructions
 

Cook the Sweet Potatoes: In a medium pot, bring salted water to a boil. Add the cubed sweet potatoes and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.

    Prepare the Chicken: While the sweet potatoes are cooking, heat a large skillet over medium heat and add olive oil. Season the chicken breasts with salt and pepper and place them in the skillet. Cook for about 6-7 minutes per side until the chicken is cooked through and has nice grill marks.

      Add BBQ Sauce: Once the chicken is cooked, pour in the BBQ sauce, coating the chicken evenly. Reduce heat to low and simmer for another 3-5 minutes, allowing the chicken to absorb the flavors.

        Shred the Chicken: Remove the chicken from the skillet, let it cool for a minute, then shred it with two forks or chop into bite-sized pieces.
