1 cup quinoa (rinsed)

2 cups water or vegetable broth

4 cups fresh kale (stems removed, chopped)

1 cup cherry tomatoes (halved)

1/2 red onion (finely diced)

1 avocado (diced)

1/2 cup cucumber (diced)

1/4 cup sunflower seeds (toasted)

1/4 cup feta cheese (optional, crumbled)

1/4 cup dried cranberries (or pomegranate seeds)

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and pepper to taste

Cook the Quinoa: In a saucepan, combine the rinsed quinoa and water (or vegetable broth). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, until all the liquid is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

    Prepare the Kale: While the quinoa is cooking, massage the chopped kale with a pinch of salt for about 1-2 minutes. This will soften the leaves and enhance the flavor.

      Combine Ingredients: In a large mixing bowl, combine the cooked quinoa, massaged kale, cherry tomatoes, red onion, avocado, cucumber, sunflower seeds, dried cranberries, and feta cheese (if using).
