Ingredients

1 lb ground beef or turkey

1/2 cup breadcrumbs

1/4 cup finely chopped green onions

1/4 cup diced pineapple (fresh or canned)

1 egg

2 cloves garlic, minced

1 tsp ginger, grated

1/4 cup soy sauce

1/4 cup teriyaki sauce

1 tsp sesame oil

1/4 tsp black pepper

Sesame seeds (for garnish)

Chopped cilantro (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Mix the Meatball Ingredients: In a large mixing bowl, combine the ground beef or turkey, breadcrumbs, green onions, diced pineapple, egg, minced garlic, grated ginger, soy sauce, sesame oil, and black pepper. Mix until well combined.

Form the Meatballs: Using your hands, shape the mixture into 1-inch meatballs and place them on the prepared baking sheet. Make sure they are evenly spaced.

Bake the Meatballs: Bake the meatballs in the preheated oven for about 20-25 minutes, or until they are cooked through and have a nice golden-brown color.

Prepare the Teriyaki Glaze: While the meatballs are baking, whisk together the teriyaki sauce and an additional tablespoon of pineapple juice in a small saucepan. Heat over medium-low until warmed through.

Glaze the Meatballs: Remove the meatballs from the oven and transfer them to a large mixing bowl. Pour the warm teriyaki glaze over the meatballs and gently toss to coat them evenly in the sauce.

Serve: Serve the teriyaki pineapple meatballs over steamed rice or alongside stir-fried vegetables. Garnish with a sprinkle of sesame seeds and freshly chopped cilantro for a burst of flavor and color. Enjoy!
