For the Meatballs:

1 lb ground beef (or chicken for a lighter option)

1/2 cup breadcrumbs (panko works best)

1/4 cup finely chopped onion

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 large egg

2 tablespoons soy sauce

1 teaspoon ginger, grated

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

For the Teriyaki Sauce:

1/2 cup soy sauce

1/4 cup brown sugar

1/4 cup pineapple juice (freshly squeezed preferred)

1 teaspoon sesame oil

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

1/2 teaspoon garlic powder

1/2 teaspoon ginger powder

1 tablespoon rice vinegar

Fresh pineapple chunks (for garnish)

Sesame seeds (for garnish)

Green onions, chopped (for garnish)

Instructions

Prepare the Meatballs: In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, parsley, egg, soy sauce, grated ginger, salt, black pepper, and red pepper flakes. Mix until just combined, being careful not to overwork the meat.

Shape the Meatballs: Preheat your oven to 400°F (200°C). With clean hands, shape the mixture into meatballs approximately 1 inch in diameter, placing them on a baking sheet lined with parchment paper.

Bake the Meatballs: Bake the meatballs in the preheated oven for about 15-20 minutes or until they are browned and cooked through, reaching an internal temperature of 165°F (74°C).

Make the Teriyaki Sauce: While the meatballs are baking, whisk together soy sauce, brown sugar, pineapple juice, sesame oil, garlic powder, ginger powder, and rice vinegar in a saucepan. Bring the mixture to a simmer over medium heat.

Thicken the Sauce: Once it begins to simmer, add the cornstarch-water mixture to the saucepan. Stir continuously until the sauce thickens, about 2-3 minutes. Remove from heat and set aside.

Combine Meatballs and Sauce: When the meatballs are cooked, remove them from the oven and transfer them to the saucepan with the teriyaki sauce. Gently toss the meatballs in the sauce until well coated.

Serve: Serve the juicy pineapple teriyaki meatballs hot, garnished with fresh pineapple chunks, sesame seeds, and chopped green onions. They can be served on their own, over rice, or as an appetizer.
