Ingredients

For the Meatballs:

1 lb ground beef (or ground turkey for a leaner option)

1/2 cup breadcrumbs

1/4 cup finely chopped green onions

2 cloves garlic, minced

1 egg, lightly beaten

1 tsp ginger, grated

1 tsp salt

1/2 tsp black pepper

1/2 tsp crushed red pepper flakes (optional)

For the Pineapple Teriyaki Sauce:

1 cup pineapple juice

1/4 cup soy sauce (low-sodium preferred)

2 tbsp brown sugar

1 tbsp rice vinegar

1 tbsp cornstarch mixed with 2 tbsp water (for thickening)

1 tsp sesame oil

1 tbsp minced fresh ginger

1 clove garlic, minced

For Garnish:

Sesame seeds

Extra chopped green onions

Pineapple chunks (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Meatballs: In a mixing bowl, combine the ground beef, breadcrumbs, chopped green onions, minced garlic, beaten egg, grated ginger, salt, black pepper, and red pepper flakes (if using). Mix everything gently until well combined.

Form the Meatballs: Using your hands, form the mixture into 1-inch meatballs and place them on the prepared baking sheet. You should have around 20 meatballs.

Bake: Place the meatballs in the preheated oven and bake for about 15-20 minutes, or until they are cooked through and browned.

Make the Teriyaki Sauce: While the meatballs are baking, prepare the sauce. In a saucepan over medium heat, combine the pineapple juice, soy sauce, brown sugar, rice vinegar, sesame oil, minced ginger, and minced garlic. Bring the mixture to a gentle simmer.

Thicken the Sauce: In a small bowl, mix together the cornstarch and water to create a slurry. Once the sauce is simmering, gradually stir in the slurry while continuously whisking. Cook for an additional 2-3 minutes until the sauce has thickened.

Combine Meatballs and Sauce: Once the meatballs are ready, remove them from the oven and add them to the saucepan with the teriyaki sauce. Gently stir to coat the meatballs in the sauce, letting them simmer for an additional 5 minutes to absorb the flavors.

Serve: Serve the juicy pineapple teriyaki meatballs on a platter, garnished with sesame seeds and extra chopped green onions. Optional: add pineapple chunks for a fresh touch.

Enjoy: Pair these flavorful meatballs with steamed rice or stir-fried vegetables for a complete meal!
