For the Mojo Marinade:

1 cup fresh orange juice (about 3-4 oranges)

1/2 cup fresh lime juice (about 4 limes)

4 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (adjust for spice preference)

1/2 cup fresh cilantro, chopped, plus extra for garnish

Salt and pepper to taste

2-3 pounds pork shoulder or pork butt

For the Tacos:

12 small corn tortillas

1 cup red cabbage, finely shredded

1 avocado, sliced

1/2 cup cotija cheese, crumbled

Lime wedges for serving

Hot sauce (optional)

Instructions
 

Marinate the Pork:

    - In a large mixing bowl, whisk together the orange juice, lime juice, minced garlic, cumin, oregano, smoked paprika, red pepper flakes, chopped cilantro, salt, and pepper.

      - Place the pork shoulder in a large zip-top bag or shallow dish and pour the marinade over the pork. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for deeper flavor.

        Cook the Pork:

          - Preheat your oven to 300°F (150°C). Remove the pork from the marinade and shake off excess liquid (discard the used marinade).

            - Place the pork in a roasting pan and cover it tightly with aluminum foil. Roast for 4-5 hours, or until the pork is extremely tender and can be easily shredded with a fork. You can also cook the pork in a slow cooker on low for 8 hours or on high for 4 hours.

              Shred the Pork:

                - Once cooked, remove the pork from the oven and allow it to rest for 15-20 minutes. Use two forks to shred the pork into bite-sized pieces.

                  Warm the Tortillas:

                    - In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side or until they are pliable and slightly toasted.

                      Assemble the Tacos:

                        - For each taco, place a generous amount of shredded mojo pork onto a warm tortilla. Top with shredded cabbage, avocado slices, and crumbled cotija cheese.

                          Serve with Extras:

                            - Serve the tacos with lime wedges on the side and drizzle with your preferred hot sauce for an extra kick. Garnish with additional cilantro if desired.
