Jalapeño Popper Potato Casserole

4 large russet potatoes, peeled and diced

1 cup cooked and crumbled bacon

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese

1 cup shredded pepper jack cheese

1-2 fresh jalapeños, finely diced (adjust based on spice preference)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

½ cup panko breadcrumbs

1 tablespoon olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Potatoes: In a large pot, bring water to a boil and add the diced potatoes. Cook for about 10-12 minutes until they are fork-tender. Drain and let them cool slightly.

      Mix the Cheese Filling: In a large mixing bowl, combine the softened cream cheese, sour cream, cheddar cheese, pepper jack cheese, bacon, diced jalapeños, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until well combined.

        Combine the Potatoes and Cheese Mixture: Gently fold in the cooked potatoes into the cheese mixture until everything is evenly coated.

          Prepare the Casserole Dish: Grease a 9x13-inch casserole dish with cooking spray or a little olive oil. Transfer the potato mixture into the dish, spreading it out evenly.

            Make the Topping: In a small bowl, mix the panko breadcrumbs with the olive oil, and then sprinkle evenly over the potato mixture in the casserole dish.
