4 large bell peppers (any color)

1 pound Italian sausage (sweet or spicy, your choice)

1 cup cooked rice (white or brown)

1 small onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for extra heat)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly season the insides with salt and pepper. Place them upright in a baking dish.

      Cook the Sausage: In a large skillet over medium heat, add the Italian sausage. Use a spatula to break it apart and cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.

        Sauté Vegetables: To the same skillet, add the diced onion and cook for 3-4 minutes until softened. Then add the minced garlic and cook for an additional 1 minute, until fragrant.

          Combine Ingredients: Stir in the cooked rice, drained diced tomatoes, oregano, basil, red pepper flakes (if using), half of the mozzarella, and half of the Parmesan cheese. Mix everything until well combined and heated through. Taste and adjust seasoning with salt and pepper as needed.

            Stuff the Peppers: Carefully spoon the sausage mixture into each bell pepper, pressing down gently to pack it in. Top each pepper with the remaining mozzarella and Parmesan cheese.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

                Garnish and Serve: Remove the stuffed peppers from the oven and let them cool for a few minutes. Garnish with fresh parsley before serving for a pop of color.
