1 lb Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

2 cloves garlic, minced

3 large carrots, sliced

3 celery stalks, diced

6 cups chicken broth

4 cups fresh spinach, chopped

1 can (14 oz) diced tomatoes, with juices

1 tsp dried oregano

1 tsp dried basil

½ tsp red pepper flakes (optional, for heat)

Salt and pepper to taste

1 cup small pasta (like ditalini or orzo)

2 tbsp olive oil

Grated Parmesan cheese, for serving

Cook the Sausage: In a large pot over medium heat, add 1 tablespoon of olive oil. Once hot, crumble in the Italian sausage. Cook until browned and no longer pink, about 5-7 minutes. Remove sausage from pot and set aside, leaving the drippings in the pot.

    Sauté Vegetables: In the same pot, add the remaining tablespoon of olive oil. Add the diced onion, carrots, and celery. Cook until the vegetables start to soften, about 4-5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Combine Ingredients: Return the cooked sausage to the pot. Add the diced tomatoes with their juices, chicken broth, oregano, basil, red pepper flakes (if using), and salt and pepper to taste. Bring the soup to a boil.

        Add Pasta: Once boiling, stir in the pasta and reduce the heat to a simmer. Let it cook according to package instructions, usually around 8-10 minutes, until al dente.

          Incorporate Spinach: Stir in the chopped spinach and allow it to wilt in the soup for about 2-3 minutes. Taste and adjust seasoning if needed.
