2 cups cooked chicken, shredded or diced

1/2 cup sliced pepperoncini peppers

1/2 cup cherry tomatoes, halved

1/2 cup diced cucumber

1/4 cup red onion, finely chopped

1/2 cup mozzarella cheese, cubed or mini mozzarella balls

1/4 cup grated Parmesan cheese

1/4 cup black olives, sliced

1/3 cup mayonnaise

2 tablespoons red wine vinegar

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Optional: Crusty Italian bread for serving

Prepare the Chicken: If not already cooked, poach or grill the chicken until fully cooked. Allow it to cool, then shred or dice into bite-sized pieces.

    Mix the Vegetables: In a large mixing bowl, combine the shredded chicken, pepperoncini peppers, cherry tomatoes, cucumber, red onion, mozzarella cheese, and black olives.
