Instant Pot Beef and Vegetable Stew

Ingredients
  

2 lbs beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 onion, chopped

3 cloves garlic, minced

4 medium carrots, sliced

3 celery stalks, chopped

4 medium Yukon Gold potatoes, diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 cup peas (fresh or frozen)

4 cups beef broth

1 tablespoon tomato paste

1 teaspoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 bay leaves

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sautéing the Beef: Start by selecting the ‘Sauté’ mode on your Instant Pot. Add the olive oil and allow it to heat up. Once it’s hot, add in the beef cubes, seasoning them with a pinch of salt and pepper. Brown the beef on all sides (about 4-5 minutes) for added flavor. Once browned, remove the beef and set aside.

    Cooking the Aromatics: In the same pot, add the chopped onion and garlic. Sauté for about 2-3 minutes until fragrant and the onions become translucent.

      Combining Ingredients: Stir the tomato paste into the onion and garlic mixture, letting it cook for about 1 minute. Add the browned beef back to the pot, followed by carrots, celery, potatoes, and green beans.

        Adding Liquids and Seasoning: Pour in the beef broth and add the Worcestershire sauce, dried thyme, dried rosemary, and bay leaves. Give everything a good stir to combine.

          Pressure Cooking: Close the Instant Pot lid and set the valve to the sealing position. Select ‘Pressure Cook’ or ‘Manual’ mode and set the timer for 35 minutes.

            Natural Release: Once the cooking time is complete, allow for a natural pressure release for about 10-15 minutes. After that, carefully shift the valve to the venting position to release any remaining pressure.

              Finishing Touches: Open the lid and stir in the peas. Adjust seasoning with additional salt and pepper if necessary. Let the stew sit for a few minutes to let the flavors meld and cool slightly.
