Honey Mustard Chicken Tenders

1 lb (450g) chicken tenders

1/4 cup honey

1/4 cup Dijon mustard

1/4 cup seasoned breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

Cooking oil spray or oil for frying

Optional garnishes: chopped parsley or sesame seeds

Instructions
 

Marinate the Chicken: In a medium bowl, combine honey, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Whisk well to create the marinade. Add the chicken tenders to the bowl and coat them thoroughly. Cover and let them marinate in the refrigerator for at least 30 minutes (or up to 2 hours for extra flavor).

    Prepare the Breading Station: Set up a breading station with three shallow dishes. In the first dish, place the all-purpose flour. In the second dish, beat the eggs until well whisked. In the third dish, add the seasoned breadcrumbs.

      Bread the Chicken Tenders: Remove each chicken tender from the marinade, allowing excess to drip off. First, dredge the tender in the flour, shaking off any excess, then dip it into the beaten eggs, and finally coat it with the seasoned breadcrumbs. Press firmly to ensure the breadcrumbs stick well. Repeat this process for all chicken tenders.

        Cook the Chicken Tenders: Heat a large skillet over medium heat and add enough cooking oil to cover the bottom. Alternatively, for a healthier version, use cooking spray. Once the oil is hot (but not smoking), add the breaded chicken tenders in a single layer, making sure not to overcrowd the pan. Cook for about 4-5 minutes per side, or until golden brown and cooked through (internal temperature of 165°F or 74°C).

          Dispose of the Oil: Once cooked, remove the tenders from the skillet and place them on a plate lined with paper towels to absorb excess oil. Let them rest for a couple of minutes before serving.
