12 chicken drumsticks

1/3 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

2 tablespoons apple cider vinegar

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C). Line a large baking sheet with aluminum foil for easy cleanup and place a wire rack on top.

    Prepare the marinade by whisking together the honey, Dijon mustard, olive oil, apple cider vinegar, minced garlic, smoked paprika, salt, pepper, and thyme in a medium-sized bowl until smooth.

      Clean and pat dry the chicken drumsticks with paper towels. This will help the skin become crispy during baking.

        Coat the drumsticks: Place the drumsticks in a large mixing bowl and pour half of the honey mustard marinade over them. Toss to coat thoroughly, ensuring each drumstick is well covered. Reserve the remaining marinade for basting later.

          Arrange the drumsticks on the wire rack. Make sure they are spaced evenly to allow for even cooking.

            Bake the chicken in the preheated oven for 25 minutes. After 25 minutes, remove the drumsticks and brush them with the reserved marinade.

              Continue baking for an additional 15-20 minutes or until the chicken is cooked through, reaching an internal temperature of 165°F (74°C) and the skin is golden and crispy.

                Broil for the last 2-3 minutes for an extra crispy finish, keeping a close eye to avoid burning.

                  Remove from the oven and let rest for a few minutes. Sprinkle with fresh parsley before serving.
