1 lb baby carrots (or regular carrots cut into sticks)

3 tablespoons honey

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

Optional: A pinch of red pepper flakes for heat

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Carrots: If using regular carrots, peel and cut them into even sticks, about 2 inches long. If using baby carrots, rinse them well and leave them whole.

      Make the Glaze: In a small bowl, whisk together the honey, olive oil, minced garlic, salt, black pepper, thyme, and red pepper flakes (if using) until well combined.

        Toss the Carrots: Place the carrots in a large mixing bowl and pour the honey garlic mixture over them. Toss well until all the carrots are evenly coated with the glaze.

          Arrange on Baking Sheet: Spread the coated carrots in a single layer on a baking sheet lined with parchment paper for easy cleanup. Make sure they aren’t crowded to ensure even roasting.

            Roast the Carrots: Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.
