Honey Garlic Chicken Stir Fry

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

1 bell pepper (red or yellow), sliced

1 cup broccoli florets

1 cup snap peas

3 cloves garlic, minced

1 inch piece of ginger, minced

1/4 cup honey

1/4 cup soy sauce (low sodium recommended)

1 tablespoon rice vinegar

1 tablespoon cornstarch

1/4 cup chicken broth or water

Salt and pepper to taste

Sesame seeds for garnish

Chopped green onions for garnish

Cooked jasmine rice or noodles for serving

Marinate the Chicken: In a bowl, combine the soy sauce, honey, rice vinegar, and cornstarch. Add the chicken pieces and mix well to coat. Let marinate for at least 15 minutes (or up to overnight in the refrigerator for deeper flavor).

    Prepare the Stir Fry: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken (discard any leftover marinade) and stir-fry for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, stirring for about 30 seconds until fragrant. Then, toss in the sliced bell pepper, broccoli florets, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender yet crisp.

        Combine Chicken and Sauce: Return the chicken to the skillet. In a small bowl, mix together chicken broth (or water) and any leftover sauce from the marinade. Pour this mixture over the chicken and vegetables, stirring well to combine. Cook for an additional 2-3 minutes until the sauce has thickened and everything is heated through.

          Season and Serve: Season with salt and pepper to taste. Remove from heat and garnish with sesame seeds and chopped green onions. Serve over cooked jasmine rice or noodles.
