Ingredients

2 lbs chicken drumsticks

1/2 cup honey

1/4 cup soy sauce (low sodium preferred)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon apple cider vinegar

1 teaspoon ground black pepper

1 teaspoon salt

1/2 teaspoon red pepper flakes (optional, for heat)

1 tablespoon sesame seeds (for garnish)

2 green onions, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a large baking sheet with aluminum foil and place a wire rack on top (this will help the drumsticks cook evenly and become crispy).

Prepare the Marinade: In a mixing bowl, combine honey, soy sauce, minced garlic, grated ginger, apple cider vinegar, black pepper, salt, and red pepper flakes (if using). Whisk together until well combined.

Marinate the Drumsticks: Place the chicken drumsticks into a large resealable plastic bag or bowl. Pour the honey garlic marinade over the drumsticks, ensuring they are well coated. Seal the bag or cover the bowl, and marinate in the refrigerator for at least 1 hour (or up to overnight for deeper flavor).

Arrange for Baking: After marinating, remove the drumsticks from the fridge. Shake off excess marinade and arrange the drumsticks on the wire rack in a single layer. Reserve the marinade for later.

Bake the Drumsticks: Bake in the preheated oven for 35-40 minutes, or until the drumsticks are golden brown and cooked through (internal temperature should reach 165°F/74°C).

Glaze the Drumsticks: While the drumsticks are baking, pour the reserved marinade into a small saucepan. Bring to a boil over medium heat, then reduce to a simmer for about 5-7 minutes until it thickens slightly.

Add the Glaze: Once the drumsticks have finished baking, remove them from the oven. Brush the thickened glaze over each of the drumsticks for an extra layer of flavor.

Final Bake: Return the glazed drumsticks to the oven and bake for an additional 5-7 minutes, allowing the glaze to caramelize slightly.

Serve and Garnish: Remove from the oven and let the drumsticks rest for a few minutes. Sprinkle with sesame seeds and chopped green onions before serving.
