Ingredients

2 medium acorn squashes

4 tablespoons unsalted butter, melted

2 tablespoons honey

1 teaspoon cinnamon

½ teaspoon nutmeg

½ teaspoon salt

¼ teaspoon black pepper

Fresh thyme leaves for garnish (optional)

Chopped pecans for crunch (optional)

Instructions

Prep the Squash: Preheat your oven to 400°F (200°C). Cut each acorn squash in half from stem to tip and scoop out the seeds with a spoon. Place the squash halves cut-side up on a baking sheet lined with parchment paper.

Make the Honey Butter Mixture: In a small bowl, combine the melted butter, honey, cinnamon, nutmeg, salt, and black pepper. Stir until well mixed and the honey is fully incorporated into the butter.

Glaze the Squash: Using a brush or a spoon, generously coat the cut surfaces of each acorn squash half with the honey butter mixture. Make sure to get into the edges for maximum flavor.

Roast the Squash: Place the baking sheet in the preheated oven and roast for 30-35 minutes, or until the squashes are tender and golden brown. You can flip them halfway through for even roasting, but it’s optional.

Garnish and Serve: After removing from the oven, drizzle any remaining honey butter over the roasted squash. If desired, sprinkle with fresh thyme leaves and chopped pecans for added texture and flavor. Serve warm as a side dish or a healthy dessert!
