For the Chicken Filling:

2 cups cooked chicken, shredded

1 cup carrots, diced

1 cup peas (fresh or frozen)

1 cup potatoes, diced

1 cup celery, diced

1 small onion, diced

3 cloves garlic, minced

1/2 cup chicken broth

1 cup heavy cream

2 tbsp butter

2 tbsp all-purpose flour

2 tsp dried thyme

1 tsp dried rosemary

Salt and pepper, to taste

For the Biscuit Topping:

2 cups all-purpose flour

1 tbsp baking powder

1/2 tsp salt

1/4 cup unsalted butter, cold and cubed

3/4 cup milk

Instructions
 

Prepare the Chicken Filling:

    - In a large skillet, melt 2 tbsp of butter over medium heat. Add the diced onions, garlic, carrots, and celery, and sauté for about 5-7 minutes until the vegetables are soft.

      - Stir in the flour and cook for another minute to create a roux, ensuring there are no lumps.

        - Gradually pour in the chicken broth while stirring, followed by the heavy cream. Let it simmer for 2-3 minutes until it thickens.

          - Add the shredded chicken, peas, potatoes, thyme, rosemary, salt, and pepper. Mix well and let it cook on low for another 5 minutes. Remove from heat and set aside.

            Prepare the Biscuit Topping:

              - Preheat your oven to 400°F (200°C).

                - In a bowl, whisk together the flour, baking powder, and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.

                  - Pour in the milk and stir until just combined. Be careful not to overmix!

                    Assemble the Pot Pie:

                      - Pour the chicken filling into a greased 9-inch pie pan or casserole dish.

                        - Drop spoonfuls of biscuit dough over the chicken filling, covering as much of the surface as possible (it doesn’t have to be perfect!).

                          Bake:

                            - Bake in the preheated oven for about 25-30 minutes or until the biscuits are golden brown and baked through.

                              - Once done, allow to cool for about 5-10 minutes. This will help the filling set slightly for easier serving.

                                Serve:

                                  - Spoon out portions of the chicken pot pie with biscuit topping and enjoy this warm, comforting meal!
