1 lb (450g) flank steak, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 bell pepper (any color), sliced

1 large carrot, julienned

1 cup snap peas, trimmed

1 small yellow onion, thinly sliced

3 cloves garlic, minced

1 inch ginger, grated

3 green onions, chopped

2 tablespoons oyster sauce

1 tablespoon sesame oil

Cooked rice, for serving

Marinate the Beef: In a medium bowl, combine the sliced flank steak, soy sauce, and cornstarch. Mix well until the beef is coated. Let it marinate for at least 15 minutes while you prepare the vegetables.

    Prepare the Vegetables: Wash and chop all the vegetables as indicated in the ingredients list.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until shimmering.

        Cook the Beef: Add the marinated beef to the skillet in a single layer. Allow it to sear for about 2-3 minutes without stirring, until browned. Then, stir-fry for another 2-3 minutes until cooked through. Remove the beef from the pan and set aside.

          Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the onions, garlic, and ginger, and sauté for about 1 minute until fragrant.

            Add Other Veggies: Toss in the bell pepper, carrot, and snap peas. Stir-fry for about 4-5 minutes, or until the vegetables are tender-crisp.

              Combine Beef and Sauce: Return the beef to the skillet and add the oyster sauce and sesame oil. Stir everything together until well combined and heated through, about 1-2 minutes.

                Garnish and Serve: Sprinkle the chopped green onions on top before serving. Serve the stir-fry over a bed of warm cooked rice.
