1 lb ground turkey

2 medium sweet potatoes, peeled and diced into small cubes

1 small onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup spinach, chopped

1 tsp smoked paprika

½ tsp cumin

½ tsp salt

¼ tsp black pepper

2 tbsp olive oil

2 large eggs (optional for serving)

Fresh parsley or cilantro for garnish (optional)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt, pepper, and ¼ teaspoon of smoked paprika. Sauté for about 10-12 minutes, stirring occasionally, until the sweet potatoes are tender and starting to caramelize. Remove them from the skillet and set aside.

    Cook the Turkey: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and diced red bell pepper, cooking for another 2-3 minutes until the bell pepper softens.

      Add Ground Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Use a wooden spoon to break it up as it cooks. Season with the remaining smoked paprika, cumin, salt, and black pepper. Cook for about 5-7 minutes, or until the turkey is browned and fully cooked.
