4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup cream cheese, softened

1/4 cup sun-dried tomatoes, chopped (optional)

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

2 tablespoons olive oil

Juice of 1 lemon

1/4 cup grated Parmesan cheese (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a medium skillet over medium heat, add 1 tablespoon of olive oil. Add the minced garlic and sauté for 1-2 minutes until fragrant. Next, add the chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.

      Mix the Cheese Filling: In a mixing bowl, combine the sautéed spinach mixture, crumbled feta cheese, cream cheese, sun-dried tomatoes (if using), dried oregano, dried basil, and a pinch of salt and pepper. Mix until well incorporated.

        Prepare the Chicken Breasts: Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.

          Stuff the Chicken: Generously fill each chicken breast pocket with the spinach and feta mixture. You can secure the openings with toothpicks if needed.

            Sear the Chicken: In the same skillet, heat the remaining tablespoon of olive oil over medium-high heat. Season the stuffed chicken breasts with salt, pepper, and lemon juice. Place the chicken in the skillet and sear for about 3-4 minutes per side until golden brown.

              Bake the Chicken: Transfer the seared chicken breasts to a baking dish. Sprinkle the grated Parmesan cheese evenly over the top. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).

                Rest and Serve: Once cooked, remove the chicken from the oven and let it rest for 5 minutes. Serve hot with a side of your choice, such as quinoa or a fresh salad.
