Ingredients

2 cups cooked chicken breast, shredded

1 cup plain Greek yogurt (full-fat or low-fat)

1/4 cup celery, finely diced

1/4 cup red onion, finely chopped

1/4 cup red bell pepper, diced

1/4 cup cucumber, finely chopped

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 tablespoon honey (optional, for sweetness)

1 teaspoon garlic powder

1 teaspoon dried dill or fresh dill, chopped

Salt and pepper, to taste

Whole grain or spinach wraps

Lettuce leaves (optional, for added crunch)

Instructions

Prepare the Chicken: If you haven't already, cook the chicken breast by boiling, baking, or grilling. Once cooked, let it cool and then shred it into bite-sized pieces.

Combine the Base: In a large bowl, add the shredded chicken, Greek yogurt, Dijon mustard, lemon juice, and honey (if using). Stir until well combined.

Add the Veggies: Toss in the diced celery, red onion, red bell pepper, and cucumber. Mix until the vegetables are evenly distributed throughout the chicken and yogurt mixture.

Season: Sprinkle in garlic powder, dill, salt, and pepper. Mix again, adjusting seasoning to taste.

Assemble the Wrap: Lay a whole grain or spinach wrap flat on a clean surface. Place a few lettuce leaves in the center if desired. Spoon a generous amount of the chicken salad mixture onto the wrap.

Wrap It Up: Starting from one side, gently fold the edge over the filling, then tuck in the sides before rolling it up tightly. Slice in half diagonally for easier eating.

Serve: Enjoy immediately, or cover with plastic wrap and refrigerate for later. This chicken salad wrap can be kept in the fridge for up to 2 days.
