2 medium zucchinis, spiralized into noodles

2 boneless, skinless chicken breasts (about 1 pound)

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese (plus more for garnish)

1 cup spinach

Salt and pepper, to taste

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Prepare the Zoodles: Spiralize the zucchinis into noodle shapes using a spiralizer. Place the zoodles in a colander, sprinkle with a bit of salt, and let them sit to drain excess moisture while you cook the chicken.

    Cook the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Place the chicken in the skillet and cook for about 6-7 minutes on each side, or until fully cooked through and golden brown. Remove the chicken from the skillet and let it rest for a few minutes before slicing into strips.

      Prepare the Alfredo Sauce: In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for 1-2 minutes until fragrant. Reduce the heat to medium and slowly pour in the heavy cream, stirring continuously. Allow the cream to simmer for 3-4 minutes, then add the grated Parmesan cheese, stirring until melted and creamy. Add the spinach and allow it to wilt. Season the sauce with more salt and pepper to taste.

        Combine Zoodles and Sauce: Add the spiralized zucchini noodles to the skillet with the sauce. Toss the noodles in the sauce for 2-3 minutes until they are just tender but still slightly crunchy.

          Serve: Plate the creamy chicken Alfredo zoodles, top with sliced chicken, and sprinkle with additional Parmesan cheese and chopped parsley for garnish. Enjoy hot!
