1 cup mixed greens (spinach, arugula, and romaine)

½ cup cherry tomatoes, halved

1 cucumber, diced

½ cup red bell pepper, diced

¼ cup red onion, finely chopped

¾ cup Greek yogurt or mayonnaise

2 tablespoons olive oil

1 tablespoon lemon juice

2 teaspoons Dijon mustard

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon fresh parsley, chopped (plus extra for garnish)

Salt and pepper to taste

Cook the Chicken: If not already cooked, season chicken breast with salt and pepper. Boil or grill until fully cooked, then shred or dice into bite-sized pieces. Let it cool.

    Prepare the Dressing: In a small bowl, combine Greek yogurt or mayonnaise, olive oil, lemon juice, Dijon mustard, oregano, basil, and chopped parsley. Whisk until smooth and well combined. Adjust seasoning with salt and pepper to taste.

      Combine Ingredients: In a large mixing bowl, add the cooked chicken, mixed greens, cherry tomatoes, cucumber, red bell pepper, and red onion.
