1 pound ground turkey

1 tablespoon olive oil

1 large onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

2 medium carrots, diced

2 celery stalks, diced

1 can (15 oz) white beans (such as cannellini or Great Northern), drained and rinsed

1 can (14 oz) diced tomatoes with green chilies

2 cups chicken broth

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon dried oregano

½ teaspoon salt (to taste)

¼ teaspoon black pepper (to taste)

1 cup corn (frozen or canned)

1 tablespoon lime juice

Fresh cilantro (for garnish)

Sour cream and shredded cheese (optional, for serving)

Instructions
 

Heat the Oil: In a large pot or Dutch oven, heat the olive oil over medium heat.

    Sauté the Vegetables: Add the diced onion, bell pepper, carrots, and celery to the pot. Sauté for about 5-7 minutes, until the vegetables are softened and the onion is translucent.

      Add Garlic & Turkey: Stir in the minced garlic and ground turkey. Cook until the turkey is browned and cooked through, breaking it up with a spatula as it cooks, about 5-7 minutes.

        Spice It Up: Once the turkey is cooked, add the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir to combine and cook for an additional 1-2 minutes to enhance the flavors.

          Combine Ingredients: Pour in the diced tomatoes with their juices, chicken broth, and white beans. Stir to mix everything well.

            Simmer: Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes, stirring occasionally. If it becomes too thick, add a little more broth or water.

              Add Corn and Finish: In the last 10 minutes of cooking, stir in the corn and lime juice for a burst of flavor. Adjust seasoning if necessary.
